Let me try my best to give you an impression of what I think here. I hope it help you a bit.
I have CH1 and CE5. They are quite similar, but you still can hear a small tone difference. I would say, CE5 sound a bit lean (thin) compare to CH1. CH1 sound warmer like a tube amp, and the colouration is smaller compare to CE5. A les paul standard with CH1 sound a little bit too fat for me over my Paevey classic 50 amp, but sound great whem use a fender guitar. However, if you play legato or spead metel or very fast solo, I think CE5 sounds better than CH1. My basswood floyd rose fender guitar with ibanez V7 neck pickup, mix with boss DS1 into bright channel of Peavey classic 50, swithing off the reverb, out to boss CH1 and DD3 to celestion vintage 30 speaker cabinet can get very similar tone like the intro of slash sweet child o mine. But when i change to CE5, and every setting remain the same, the sound become very Richie Blackmore like.
So i suppose it depend on what guitar you use, if you would use maple fender fretboard, the sound may be too thin with CE5 when you have my setup, but spead solo becomes a little bit cleaner and clearer. If you use fender rosewood fretboard, CE5 fatten up the tone a bit, and the distortion sounds more even. But once you change to CH1 with rosewood fingerboard over a 25.5 inch basswood fender like guitar with V7 and V8 thats when they are very good for satriani kind of solo.
However, the above opinion are all based on my loving Ibanez V7 and V8 pickup on warmer basswood body. I can't say be sure for others if you would have use different gear like I do.
